It is not for nothing that they say homemade soup is like a hug: it soothes, “grounds” you and gives a sense of safety. Homemade beetroot soup with sweet-and-sour marinated cucumbers is like a hug with a squeeze: filling, eye-opening (very fitting if it is still gloomy outside the window…) and warming. The beetroot adds sourness, the marinated cucumber adds sweetness, and the result is impossible to stop eating!
Treat your loved ones. What is more, this is one of those soups that is even tastier the next day, so make plenty of it. It is very tasty eaten with sour cream and dark bread.

Preparation

    Season the ribs with salt, pepper and garlic.

    Brush with barbecue sauce and leave to marinate for 2 hrs.

    Bake in the oven at 160 °C for 1.5 hrs, brushing with sauce every 20 min.

    Before serving, bake for 5 min at a higher temperature of 220 °C for a caramelised crust.


Tips


Serve with roast potatoes and tasty Kėdainiai fermented vegetables.
